Stuffed eggs in Argentina (Huevos rellenos en Argentina)

- 6 soft boiled eggs

- 6 anchovy filets (marinated in olive oil)

- 6 Tbsp of mayonnaise

- Some olives cut in slices

- Some sweet red peppers cut in strips

- Salt and pepper

Boil eggs soft. Remove shell and cut them along in half. With a teaspoon remove yolks and place them all in a bowl.

Cut the anchovies in small pieces and add them to the yolks.

Then add the mayonnaise, salt and pepper and mix well. If it results thick, add some olive oil.

Fill with that mixture the white halfs of eggs. Place them in a dish and decorate them with the slices of olives and the strips of sweet red peppers.

Place it for a while in the refrigerator and serve cold.
