Place the pastry shell in the oven tray. Preheat oven at 375F (190C).
Peel pears and cut them in dices.
Beat Roquefort cheese and add pears. Beat eggs and heavy cream and add it.
Salt and peppers to taste. Fresh nutmeg to taste.
Pour the cheese mixture into the pastry shell and bake medium heat for 30 minutes or until top has browned.
